Holiday Banana Pancakes


These pancakes have been eaten in Majorca, Ibiza, Australia, basically every time we go away, they are Ruby's favourite breakfast to have. Great for riding or rest days you can change the amount of protein and carbohydrates by adjusting your toppings.

Ingredients

1 Banana

1 Egg

Vanilla essence

30g Wholemeal flour

1/2 tsp Baking powder

Toppings 

As we are normally away, we always head to the markets to find new toppings depending on what is in season that time of year. We tend to go for local honey, yogurt, and berries (cherries, strawberries, blueberries, blackberries).

Method

Whisk together the egg and banana, in a large mixing bowl with a fork or hand whisk, it will turn a lighter colour when its whisked properly and the banana will be mashed and combined into the egg.

Next, gently add the flour and baking powder, give it a little stir and you're done!

Add a little coconut oil into the pan and pour in the desired pancake size you are after, we like them the size of the palm of your hand, then you can stack them.

Once the top of the pancakes look a bit firmer take a peek and when it looks golden give it a flip.

Place into a nice bowl and add your favourite toppings.
